Chef Paul’s Oyster Knife is 5/32″ AEB-L stainless steel. The burlap handles are both chemically and mechanically attached to the knife with marine grade epoxy and brass pins. The knife measures 7 1/2″ inches overall with a 2 1/4″ sharpened edge. The height of the blade is 7/8 inches. The knife comes with the Wild Harvest logo on the Presentation side and Paul’s initials on the opposite side. Finally we add thumb scallops to this professional grade tool to make a hearty shucker.
